FOUR CHEESE PASTA with spinach and sun dried tomatoes
Serves 4, prep 20mins, Calories/fat 755cals/41g
350g (12oz) pasta shapes
75g (3oz) Dolcelatte, crumbled (it doesn't, it will stick to fingers!)
1/2 x 150g tub mascarpone
75g (3oz) Parmesan, freshly grated
1/2 x 225g pack baby spinach
1 x pack light mozzarella
8-12 pieces sun dried tomatoes or 8-12 cherry tomatoes, halved
salt & freshly ground pepper
1. Cook the pasta shapes according to pack instructions. Drain, reserving 4 tbsp of the cooking water. Return the water
to the pan and stir in the dolcelatte, mascarpone and parmesan and warm gently to make a sauce.
2. Sir the pasta and half the spinach into the cheese sauce and season generously.
3. Cut the mozzarella into small cubes and mix with the remaining spinach and tomatoes.
4. Transfer the pasta to heated plates
and top with the mozzarella, spinach and tomato mixture. Mix well and eat straight
away.
