Lentil Soup

 

1 large onion, roughly chopped

2 carrots, cut into slices

2-3 potatoes, cut into dice

1 mug of red lentils

2 pts vegetable or chicken stock

1 tsp curry powder (optional)

Juice of 1 lemon

salt and pepper to taste

 

Put all the ingredients into a large pan or pressure cooker. Bring to the boil. Reduce to a simmer and put the lid on. Cook for about 30-40 minutes if using a saucepan. If using a pressure cooker,  bring to pressure, then cook for about 15 minutes.

 

Blend the soup in batches to make a thick, smooth soup.
