Fat-Free Chocolate Brownies.

 

14oz / 411g prunes in fruit juice, drained and stoned

2 eggs, size 3

4oz caster sugar

2oz cocoa

2oz plain flour

1 tsp. baking powder

3oz / 75g dark chocolate

 

1. Preheat oven to Gas 4/ 350 deg. F/ 180 deg. C. Line a 7”/ 18cm square tin with non-stick baking parchment. Snip the paper at the corners and press into the tin.  Secure the corners with paper clips.

 

2. Puree the prunes in a food processor. Using an electric whisk beat the eggs and sugar until pale and frothy and the whisk leaves a trail when lifted. Fold in the prune puree. Sift the cocoa, flour, and baking powder and fold in.

 

3. Pour into the prepared tin and tilt to level the surface. Bake for 35 – 40 mins until well risen and a skewer comes out clean.

 

4. Leave to cool in the tin. Melt chocolate and spread over in a thin layer. Leave to set.

 

5. Remove from the tin, peel off paper and cut into 12 squares.
